Basic Build-Your-Own Quiche

Quiche is simple, quick, and can elevate that random collection of leftovers in your fridge to an elegant and memorable dish. There are endless variations of this one-dish-wonder, so get creative!

1 prepared refrigerated pie crust
6 eggs
2 cups milk
1 teaspoon coarse sea salt
1/2 teaspoon black pepper

Your choice of…

1 cup of cheese (cheddar, pepper jack, goat, gouda, swiss, provolone, mozzarella, etc.)
1/2 cup of meat, cooked & chopped (ham, sausage, crab, bacon, lunch meat, etc.)
1/2 cup of veggies (tomatoes, mushrooms, roasted red peppers, spinach, onion, etc.)


Pre-heat oven to 375. Arrange pie crust in a ceramic or glass pie pan. In a medium bowl, whisk eggs and milk together. Layer cheese, meat and veggies in the pie crust. Sprinkle salt and cracked pepper over filling, the pour in the egg and milk mixture.

Bake for 45-50 minutes until quiche is round in the middle and lightly browned on top (don’t worry, it will flatten out as it cools!)

Faux Gourmet Tip: To make a vegetarian quiche, substitute 1/2 cup of veggies for the meat. If you're baking with a foil pan (they're smaller) use 4 eggs and 1 1/2 cups of milk instead of the recipe above.
